Honey Lime Chicken Enchiladas!

So I first heard about honey lime chicken enchiladas from Busy Bee Lauren's Blog but there was no recipe so I don't know if these ones turned out the way that hers did. So I went searching for another recipe and found it at The Sisters' Cafe

Here's the recipe that I used.

Honey Lime Enchiladas

1.5 lbs pork or chicken, cooked and shredded

Sauce:

1/3 c honey

1/4 c lime juice

1 Tb chili powder

1/2 tsp garlic powder

2 (10 oz) cans green enchilada sauce

equal parts mixed together of:

mozzarella cheese, shredded

cheddar cheese, shredded

flour tortillas

Mix together sauce ingredients then add to shredded pork or chicken. Let the sauce soak into the meat for about 30 minutes.

Lightly spray 2 pans with non-stick baking spray. (I usually use one 9x13 and one 9x9 but it may vary with how thick you stuff your enchiladas) Pour green enchilada sauce into pans to coat the entire bottom. Fill tortillas with shredded meat and desired amount of cheese. Roll and place in dish.

Pour remainder of sauce over enchiladas and sprinkle more cheese on top - don't be stingy! (I sometimes use more like 1 1/2 cans- you can freeze left over enchilada sauce in a baggy.) Bake uncovered at 350 degrees for 30 minutes. Then turn on broiler and place enchiladas nearer the top of oven. Let it broil until cheese is slightly brown and crispy. It is now time to WOW your family!!

Diabetic Doggie!

So Popcorn hasn't been feeling well lately. She has had a stuffy nose and has been really thirsty. Some days she'll pee alot, others she won't pee at all. So KC took her to the vet and they ran some tests and she has been diagnosed with Diabetes! So now she is on insulin.. now for a normal person this would be sad, but it cracks me up. Not because I think it's funny that she has it. I get home from clinicals, ask the boyfriend how the vet went and explains to me that she has diabetes, and I will be giving her insulin injections. So I check the stuff from the vet/pharmacy and find the script to say (NPH 10 units BID) in non-medical terms it means 10 units of normal insulin twice a day. Then I open the box of insulin and it's the insulin I use at the hospital!

I guess it's really not that funny... but in my nerd nurse (in training) brain I find it comical...

New couches!!

Boyfriend bought us new couches from Tiffy and Bryan (parents to my ADORABLE nephew Brax!) LOVE LOVE LOVE THEM!

Our previous couches were from Boyfriends mom, and they were comfortable but the colors did not go with our (or should I say my) interior decorating. :] ♥

So I suck

So I suck at keeping this updated (Sorry Taffee!) But I've been busy with school, so I haven't really had much to blog about.. however I have MUCH over due pictures from my birthday party...So.. what's been going on lately?
Well I go to school usually from 8-12 every day on Tuesdays I have clinicals from 6:30-1:30 at Parkdale. I love the residents they are so neat! We only have two more left, (Tomorrow and next week.) Then we start hospital rotations, and I'm really excited for that, it will be such a different experience from the nursing home and I am looking forward to learning new things. School is going by faster then I thought it would. It's very busy, but I enjoy it and cannot wait to be done and move out of Price.
Last Thursday my sisters soccer team played against the parents. (I played because my mother would not) and we totally kicked their trash! I also watched Maddi-gas-car from Friday afternoon until Saturday afternoon. She is getting so big, and is too cute for her own good. Boyfriend and I enjoyed it, and I believe the doggy did too because she liked all the kisses she received!
Speaking of Popcorn, I am in the process of making her Halloween costume (pictures to come as soon as it's complete!) only I can only sew with bf takes her to work with him because she is not a fan of the sewing machine and tries to be destructive to the house to get rid of her anxiety. She and I are going to be bumble bees and boyfriend is going to be a bee keeper. :) I'm super excited for Halloween, what are you guys going to be? I hate the cold weather though. I finally made boyfriend turn on the furnace because I hate getting out of bed when it's freezing causing me to sleep in and show up right on time to class (which isn't always a good thing).
On a final note, I purchased this sweet pattern from Jessica of Happy Together on her Etsy Shop to make these adorable octopus stuffed animals. [if you're family your kids will probably be receiving them for Christmas, so be excited!]
I'll be back in the near future with pictures of our Halloween costumes and such. I'll be sure to update soon so you can keep up with my oh so exciting life (Taffee!)
