Merry Christmas! (Late)

I don't really have any pictures from Christmas this year because SOMEONE was in such a hurry for us to open presents that it was Chaos. Boyfriend and I spent the week in SLC at his Grandma's house, his family was in town. I LOVE them! Emma (Boyfriends sister and one of my BFF's) has lots more pictures on her camera from the week so when she uploads them, I will steal them from her :]

We received some wonderful gifts and I am grateful for all of them.

1 semester down

Three more to go until I'm done with school :]

I passed both of my finals, so I passed all my classes! It's such a relief to have a break for a few weeks. I plan on sewing Christmas presents, reading lots and lots of books (My first stop after I finished my finals was to the Library) and cleaning the house. Which is much needed!

I guess I haven't updated in forever..

For thanksgiving we went to the boyfriends Grandma's house there were a ton of people but it was fun. I also got a cricut and learned to make baklava!

I have alot to finish for presents but I am SO excited for Christmas. We will be with the other side of KC's family in Salt Lake. His sister Emma is like my favorite person ever and I haven't seen her in a year and a half, so I'm VERY excited!

Honey Lime Chicken Enchiladas!

So I first heard about honey lime chicken enchiladas from Busy Bee Lauren's Blog but there was no recipe so I don't know if these ones turned out the way that hers did. So I went searching for another recipe and found it at The Sisters' Cafe

Here's the recipe that I used.

Honey Lime Enchiladas

1.5 lbs pork or chicken, cooked and shredded

Sauce:

1/3 c honey

1/4 c lime juice

1 Tb chili powder

1/2 tsp garlic powder

2 (10 oz) cans green enchilada sauce

equal parts mixed together of:

mozzarella cheese, shredded

cheddar cheese, shredded

flour tortillas

Mix together sauce ingredients then add to shredded pork or chicken. Let the sauce soak into the meat for about 30 minutes.

Lightly spray 2 pans with non-stick baking spray. (I usually use one 9x13 and one 9x9 but it may vary with how thick you stuff your enchiladas) Pour green enchilada sauce into pans to coat the entire bottom. Fill tortillas with shredded meat and desired amount of cheese. Roll and place in dish.

Pour remainder of sauce over enchiladas and sprinkle more cheese on top - don't be stingy! (I sometimes use more like 1 1/2 cans- you can freeze left over enchilada sauce in a baggy.) Bake uncovered at 350 degrees for 30 minutes. Then turn on broiler and place enchiladas nearer the top of oven. Let it broil until cheese is slightly brown and crispy. It is now time to WOW your family!!

Diabetic Doggie!

So Popcorn hasn't been feeling well lately. She has had a stuffy nose and has been really thirsty. Some days she'll pee alot, others she won't pee at all. So KC took her to the vet and they ran some tests and she has been diagnosed with Diabetes! So now she is on insulin.. now for a normal person this would be sad, but it cracks me up. Not because I think it's funny that she has it. I get home from clinicals, ask the boyfriend how the vet went and explains to me that she has diabetes, and I will be giving her insulin injections. So I check the stuff from the vet/pharmacy and find the script to say (NPH 10 units BID) in non-medical terms it means 10 units of normal insulin twice a day. Then I open the box of insulin and it's the insulin I use at the hospital!

I guess it's really not that funny... but in my nerd nurse (in training) brain I find it comical...

New couches!!

Boyfriend bought us new couches from Tiffy and Bryan (parents to my ADORABLE nephew Brax!) LOVE LOVE LOVE THEM!

Our previous couches were from Boyfriends mom, and they were comfortable but the colors did not go with our (or should I say my) interior decorating. :] ♥
